What Makes a Chilli High Pungency?
The heat of a chilli pepper is determined primarily by its capsaicinoid content — a group of chemical compounds produced in the placental tissue of the fruit. The two most significant capsaicinoids are capsaicin and dihydrocapsaicin, which together account for over 90% of total pungency in most chilli varieties.
The Scoville Heat Unit Scale
Scoville Heat Units (SHU) measure the concentration of capsaicinoids in a chilli pepper. The scale was originally developed by pharmacist Wilbur Scoville in 1912 using a sensory dilution method. Modern testing uses HPLC (High Performance Liquid Chromatography), which directly measures capsaicin and dihydrocapsaicin concentrations and converts them to equivalent SHU values — providing far greater accuracy and repeatability than the original organoleptic method.

The SHU of a given chilli variety depends not only on genetics but also on growing conditions. Stress factors during cultivation — particularly water stress and heat stress — are known to increase capsaicinoid biosynthesis. Our High Pungency Sourcing
Not all Teja S17 chilli qualifies as high pungency grade. SHU levels within any variety vary significantly by growing season, farm location, irrigation practices, and post-harvest handling. Gaman Impex uses a specific selection and testing process to identify and segregate true high pungency lots from standard pungency material.
Selective Procurement
Our field procurement team uses rapid Scoville field test kits to screen incoming lots at source. Only lots that exceed the SHU threshold at preliminary screening are retained for the high pungency category. These segregated lots are then formally tested by HPLC at our laboratory partner facilities before being released for sale as certified high pungency grade.
HPLC Certification
Every high pungency lot shipped by Gaman Impex is accompanied by an HPLC test report confirming capsaicin content, dihydrocapsaicin content, total capsaicinoid percentage, and equivalent SHU value. This report is issued by a NABL-accredited laboratory and forms part of the Certificate of Analysis (COA) provided with each shipment.
Lower Moisture for Extract Efficiency
