Our Multi-Stage Chilli Cleaning Process
Raw chillies arriving from Guntur APMC yards and direct farm procurement contain varying levels of stones, soil clumps, stems, leaf debris, and damaged or discoloured pods. Our multi-stage cleaning process systematically removes all contaminants to produce export-grade cleaned chilli that passes the strict incoming quality checks of buyers in Vietnam, China, Thailand, Malaysia, and European markets.
- Stage 1 — Pre-Cleaning & Scalping Initial pass through a rotary scalper that removes large stones, clumps of soil, and oversized debris from the raw chilli stream.
- Stage 2 — Air Aspiration Winnowing Controlled air flow removes dust, light leaf fragments, and fine particulate matter. Air velocity is calibrated to separate debris without removing whole chilli pods.
- Stage 3 — Destoning Gravity destoner separates stones and dense foreign matter from the chilli stream based on specific gravity differences. Effective for removing small stones that pass the scalper.
- Stage 4 — Stem Removal Dedicated stem-removal machine detaches and screens out attached stems, calyx, and peduncle. This stage is critical for markets that specify stemless or low-stem content requirements.
- Stage 5 — Final Inspection & Sampling Cleaned chilli passes through a quality inspection belt where trained sorters manually verify output quality. Samples are drawn and tested for moisture content and foreign matter percentage before clearance to the colour sorting stage.

Import country customs and food safety authorities in Vietnam, China, and the EU conduct mandatory incoming inspections of chilli shipments. Lots with high foreign matter percentages — particularly stones and metal fragments — are subject to rejection, destruction orders, or temporary import bans. Achieving <0.5% Foreign Matter
International export grade specifications for dry red chillies typically require foreign matter content below 1%, with premium buyers specifying <0.5%. FSSAI Compliance
Our cleaning facility operates under a valid FSSAI (Food Safety and Standards Authority of India) license. FSSAI compliance ensures that our facility maintains required hygiene standards including food-contact surface sanitation, pest control protocols, worker health and hygiene practices, and documented cleaning and sanitation schedules. FSSAI compliance is a prerequisite for obtaining the health and sanitary certificates required by most import countries.
Integration with Colour Sorting
Cleaning is the first stage of our processing workflow. After the five-stage cleaning process, cleaned chilli proceeds directly to optical colour sorting — where CCD camera sorters remove discoloured, mouldy, aflatoxin-suspect, and damaged pods. This integrated workflow ensures that only properly cleaned chilli enters the colour sorting phase, maximising the efficiency and output quality of the colour sorters.
